Tanauan Leyte “ a booming town, some 18km south of Tacloban City has a fair share of pride on mouthwatering delicacies. People of
Tanauan
, or Tanauaneño as they are fondly called has the custom of preparing native delicacies in parties, special occasions, fiestas, and of course for pasalubong. And we are good at preparing them. These native delicacies include: puto, lidgid, suman latik, bibingka, pastillas, yema, to name a few. Binagol and moron are the most famous for pasalubong to non-Waray officemates, classmates, friends, neighbors, relatives around the archipelago or may even reach around the world. In rural areas, fiesta won’t be complete without having a moron on the table and the tradition “bringhome” for visitors. Neighbors try to compare their own recipes and exchange their produce for tasting.

Another delectable food that we Filipinos love to see on the table and being looked forward in every occasion is the lechon. We at Tanauan have our own recipe and style in preparing it and for us Tanauaneños nothing compares to the taste of a lechon made in Tanauan Leyte. This is a promising industry in our town.

Native delicacies of every place define its tradition and culture of its people. It is being passed from generation to generation which also creates oneness of a community.

  4. I agree that the Tanauan lechon that is unparalled in the whole of the Philippines? I have heard of friends from different parts of the Philippines like Manila and Davao who have ties back to Tanauan that they still order the lechon from our town. We do prepare it differently.

  9. How many days ba ang expiry ng binagol at moron when refrigerated? I really wanted to bring it here abroad but I am afraid masayang lang. Besides we have 9 to 10 hours flight in going here…Any suggestions? Many colleagues really wanted to taste it..The one you can buy in Manila…esp in Farmer’s Market, Cubao..not that delicious compare what we have in Tanauan and Dagami..

  12. I think moron, binagol etc. that you have mentioned are not originated from Tanauan bangin pa lugod an “sampilot” ngan “sagmani” if anyone knows those products.

  13. yes! i really agree that the lechon in tanauan is the most delicious lechon…… i am here now in cebu and i tasted the lechon here and harayo talaga hit luto ha tanauan!!!!!!

    actually my mother and sisters are very good makers of “moron”. siyempre am proud of them because they are my family!!!!hehehe!!

  18. Hey Cesar, you’re not a real Tanauaneño if you don’t know what sampilot is. When I was growing up, someone from San Roque would always be selling it around specifically in the afternoon shouting “SAMPILOOOOT!!!!”

    Maybe you’re from a new generation that’s why sampilot is somehow foreign to you. Anyway, sampilot is surely a very sumptous delicacy that I think I can only have in Tanauan (I think). :o)

    As for LECHON, Tanauan has the best!

  34. Lechon ang isa sa mga favorite ng mga Filipino. Kahit saan hinahanap ng mga Filipino ang lechon. Masarap kasi ang lechon. Lalo na kung ma crispy yung balat. Yummmy ang sarap.

    Hindi ko pa natikman ang lechon sa leyte hindi pa kasi ako nakapunta dyan. Sa cebu masasarap ang lechon nila. Doon kami palaging umorder every time may occasion dito sa amin. Masasarap kasi ang lechon cebu at macrispy pa ang balat. Hindi na rin kailangan lagyan pa ng liver sauce or mang tomas dahil malasa na ang meat.

  35. Im not a big fun of lechon. At first i don’t like to eat lechon because of its oily skin. But when my cousin pursue me to eat lechon. Thats the time i eat. Because i don’t want that she disappointed me. It was her 18th birth day. First bite of lechon i feel yucky because i don’t like to eat oily food. But when i taste it wow it sooooooooo yummy. It is very deliciouse. Thanks to my cousin coz now im always craving lechon.

    Lechon cebu is really the best. The tasty meat and crunchy skin was good. And the taste was great.

  37. Hi Guys,

    The ingredients for the “ARASIP” as follows:

    1) The extracted flour (Arasip) from the lumbia/nipa palm.
    2) Coconut meat (Butong) from niyog.
    3) White or brown sugar.

    Just mix or combine all the ingredients in a bowl. Then, gawin na budbud gamit ang dahon ng saging or sagikhik na pambalot.

    Isaing sa kaldero like suman or moron, tilawi kung luto na para di mahilaw.

    Kamusta na kayong lahat at sana ang iyong negocio e di gaanong apektado ng pang ekomiyang suliranin ng sanlibutan!!

    ARASIP pala ang pangalan ng lokal na pagkain na yan ano?? Natatandaan ko nung ako’y bata dito sa aming sulod ang paraan ng paggawa niyan!! Nanunood lang ako sa mga gumagawa at nakikikain tapos!! Masarap talaga!!!!

    Una pipili ng isang puno ng LUNGBIYA at DI NIPA na medyo me katandaan na at itutumba! Pagkatapos bibiyakin at kukunin yong nasa loob ng puno na di ko alam ang ngalan!! Puputolputulin ng pirapiraso at ipapasok sa lusong ( wooden mortar ) at babayuhin hanggang maging pino na para nang harina!! Itong parang harina e ilalagay sa salaan at ilulubog sa tubig at kakawkawin o hahaluin sa pamamagitan ng kamay. Ang matira sa salaan e itatapon at ang lumubog na parang gawgaw a siyang gagawing ARASIP.

    Bago maging ARASIP e kelangan patuyuin muna sa pamamagitan ng pagbibilad sa init ng araw.Pagnatuyo na at saka lamang paghahaluin ang ginayat na “butong” at ang harina ng lungbiya at asukal-maaaring kayumanggi o puti. Ang aming ginagamit ay ang tinunaw na kalamay!! Hindi yung kalamay na kinakain sa Maynila at iba yon! Kalamay na gawa sa juice ng tubo!!

    Ang paghalo e tama lang ang tubig para lumapot na para bang katulag ng paggawa ng puto bumbong! Ang tamis e ayon sa panlasa lamang.Pag nahalo na ng husto saka babalutin ng dahon ng saging na saba o dahon ng hagikhik!! Di gaanong mahigpit ang pagsara sa binalot na harina para me expansion. Pagkatapos saka ilalagay sa palayok at di pinupuno ng tubig.Tama lang na di matuyuan hanggang sa maluto. Luto na ang arasip pag nangangamoy na ang usok na galing sa loob ng palayok!! At upang matiyak na talagang luto na ang arasip e tinitikman!!! Kasama ako sa pagtikim!!

    NOTA BINI:

    Ang paraang ito ng paggawa ng ARASIP e ginagamit ng mga tao dito sa aming sulod. It amon sulod tipakadto ha KILING.Kon mayada iba nga paagui hin pag luto hit arasip diri ko kinonkontra!! Maupay pa ngani ipost dinhi hini nga page basi ko hibaruan!!! O sigue tilawi naton!!!! Mabuhay an ARASIP!!! Mabuhay an mga WARAY-WARAY ha Tanauan!!
