HUMBA…..A Tease to your Palate!

Filed Under (Native Delicacies) by Cesar Garcia on 16-03-2007

This may not belong to our known native delicacies but i think this viand is unique to us Warays. Humba…for sure it won’t be out of the picture during occasions especially fiestas. Aside from lechon paksiw, humba is one of the best “pasalubong” to relatives who miss the tastes of Tanauan.

As requested, here is an incomplete recipe - incomplete because there are no measurements of the ingredients. You just have to mix the ingredients that suits to your taste.

Ingredients:

Pork (spare ribs part, mas marasa kun damo it tambok hehehe)
soy sauce
vinegar
sugar
salt
garlic
black beans
vetsin (if one can’t cook without it)

- others add tablea to make it darker

Procedure:

Just mix all the ingredients and cook till the pork is tender.

Note: if for many servings, boil pork first till half-cooked, remove excess water, then add all the ingredients.

Long Live Tanauan Leyte..

  2. Marasa nga sura para han ngatanan… Pero kun health conscious naman it makaon, like me, kuha-a iton tambok before cooking. Basta iton timpla is just right, taste will be the same no matter what. Paghinay han tambukon nga mga pagkaon para minos gastos ha doctor ngan medicine. So when you cook this “sura”, think of us kay there is nothing like home! Mamatron na la ako when I come home. (”,)
